Ils sont compos\u00e9s d&#8217;un insert passion-mangue, d&#8217;un craquant pistache, d&#8217;une mousse noix de coco le tout pos\u00e9 sur un biscuit pistache et recouvert d&#8217;une ganache pistache. Bien remuer vivement jusqu&#8217;\u00e0 ce que le chocolat soit bien fondu et la pistache m\u00e9lang\u00e9.<\/p>\n<p>Ajouter la g\u00e9latine essor\u00e9e et m\u00e9langer le tout. Verser le reste de la cr\u00e8me et remuer de nouveau.<\/p>\n<p>Puis remplir les empreintes et r\u00e9server au cong\u00e9lateur.<\/p>\n<h3>Pr\u00e9paration de la mousse noix de coco:<\/h3>\n<p>Tremper les feuilles de g\u00e9latine dans un grand bol d\u2019eau froide.<\/p>\n<p>Chauffer 50 g de votre cr\u00e8me de noix de coco dans une casserole, quand celle \u2013ci est \u00e0 \u00e9bullition hors du feu ajouter les feuilles de g\u00e9latine essor\u00e9es et bien remuer le tout. Puis int\u00e9grer le restant, remuer de nouveau et r\u00e9server.<\/p>\n<p>Chauffer les 15 g d\u2019eau avec le sucre et pendant ce temps-l\u00e0 monter votre blanc en neige au robot. Int\u00e9grer le sirop d\u00e9licatement en filet quand celui-ci a atteint 116\u00b0 tout en continuant \u00e0 battre le tout pendant 5 minutes environ jusqu\u2019\u00e0 ce que la meringue refroidisse. R\u00e9server la meringue.<\/p>\n<p>Battre la cr\u00e8me fra\u00eeche bien froide en chantilly et l\u2019incorporer \u00e0 la meringue.<\/p>\n<p>Puis incorporer d\u00e9licatement la cr\u00e8me coco.<\/p>\n<p>Pr\u00e9parer tout pour faire votre montage.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-2442\" \u00e9clair, les remplir au 3\/4.<\/p>\n<p>D\u00e9poser l&#8217;insert passion.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-2441\" pistache et recouvrir le tout de mousse noix de coco.<\/p>\n<p>D\u00e9poser votre biscuit sur chaque \u00e9clair et r\u00e9server le tout au cong\u00e9lateur une nuit.<\/p>\n<p>Le lendemain juste d\u00e9pos\u00e9 quelques morceaux de mangue et une petite fleur de sucre.<\/p>\n<p>Avec la mousse noix de coco pas besoin de gla\u00e7age le rendu est tr\u00e8s beau sans.<\/p>\n<p><img
