Fouetter le tout.<\/p>\n<p>Chauffer le jus de citron dans une casserole. Une fois le jus fr\u00e9missant, hors du feu verser la pr\u00e9paration \u0153ufs sucre ma\u00efzena tout en fouettant sans cesse.<\/p>\n<p>Remettre sur le feu. Chauffer doucement jusqu&#8217;\u00e0 ce que la cr\u00e8me citron \u00e9paississe. Ne pas faire bouillir.<\/p>\n<p>Une fois la cr\u00e8me prise la diviser en deux et la r\u00e9server au r\u00e9frig\u00e9rateur.<\/p>\n<h3>Mousse citron:<\/h3>\n<p>R\u00e9server au cong\u00e9lateur 15 minutes avant le fouet, bol du robot et la cr\u00e8me liquide enti\u00e8re.<\/p>\n<p>Puis ensuite monter la cr\u00e8me liquide en chantilly et l&#8217;int\u00e9grer \u00e0 la moiti\u00e9 du lemon curd refroidit. Faire chauffer en surveillant la temp\u00e9rature \u00e0 l\u2019aide d\u2019un thermom\u00e8tre. D\u00e9poser les blancs dans le bol du robot. Quand le sirop atteint 110\u00b0C, commencer \u00e0 monter les blancs en neige \u00e0 la vitesse maximale. Quand il atteint 118\u00b0C retirer la casserole du feu et verser doucement le sirop sur les blancs, sans cesser de fouetter. Continuer de monter la meringue jusqu\u2019\u00e0 complet refroidissement.
